Als u deze zomer weer naar een Franse camping gaat dan zult u het bekende ritueel bij de Franse gasten op de camping ongetwijfeld meemaken. Men komt na een dagje weggeweest te zijn, voldaan thuis en steekt de barbecue eens lekker aan. In afwachting van een heerlijk gebakken speklapje en een biefstukje, begint men met de voorbereidingen van de salades en houdt men de barbecue nauwlettend in de gaten. In de linkerhand heeft men de tang vast om het vlees te draaien en in de rechterhand zult u waarschijnlijk…juist ja….een glaasje pastis zien.
Een pastis is namelijk, met name in Zuid Frankrijk, een zeer bekend aperitief, dat de Fransen graag drinken alvorens men aan tafel gaat. Het is een drankje, op basis van steranijs en kruidenextracten. Het alcoholpercentage ligt tussen de 40% en 45%. Voor consumptie wordt er koud water aan toegevoegd, waarbij de karakteristieke troebeling ontstaat.
Het Provençaalse woord pastis betekent zoiets als mengsel. De drank pastis vindt zijn oorsprong in de haven van Marseille, en de kruiden van het land weten zich er in verenigd met de kruiden en specerijen uit het Oosten (zoethout, anijs). Het recept van Paul Ricard uit 1932 bezorgde hem de status van wereldmarktleider in pastis. Verwante anijsdranken uit het Middellandse Zeegebied zijn sambuca (Italië), ouzo (Griekenland), raki (Turkije) en arak (Libanon, Syrië).
Niet alleen op de camping, maar ook in diverse kleine Zuid-Franse dorpjes zult u de bewoners regelmatig rond een uur of 7 in de avond een glaasje pastis zien drinken en tegelijkertijd een balletje zien gooien tijdens het dagelijkse jeu de boules. Een prachtig, typisch Frans ritueel, dat men koestert….
